A little history
The history of honey baking dates back to the ancient civilisations of Rome, Egypt and Greece. Our ancestors valued honey not only for its fabulous sweetness, but also for its ability to prolong the freshness of baked goods for a long time and give the product an enchantingly delicate flavour.
Initially, simple yeast honey bread was made by mixing flour with honey, leaving it for a month, and then baking it. German nuns modified the recipe by adding spices, dried fruits, and nuts. The pastry became much tastier and gained popularity, and was served with tea.
Each country has its own recipe for honey cake. In France, it’s a honey cake made with several types of flour and many spices. In England, it’s the famous gingerbread, to which ginger, cinnamon, and anise are added. In the Czech Republic and Slovakia, it is a fragrant heart-shaped honey bread.
There is a beautiful legend about how the first honey cake appeared – from the most delicate layers of honey dough with custard. It was prepared for the wife of the Russian Emperor Alexander I by a young chef who did not know that the empress did not like honey. However, the dessert was highly appreciated and became a favourite and popular dish at royal events.
